Ruby Cacao Bar with French Reserve Grade Fig, Pralines and Dark Chocolate Crisps (recipe 1)

French reserve grade figs with notes of brown sugar, port wine and molasses, complementing nicely the red fruits of the ruby cacao and bitterness of the dark chocolate.
As soon as I tried the reserve figs for the first time, I knew that they had to be in this bar. It was as if I had never tasted a fig before. The texture and flavor pair beautifully with the ruby cacao.
The reserve grade figs used in this bar have been grown in Provence, France for more than 100 years, these heirloom figs are treated like royalty and rarely seen outside the region.
The heat of the sun and the careful eye of our artisan fruit growers bring the figs to peak ripeness to be harvested and dried.
The newly discovered ruby cacao is now considered the “fourth chocolate!” Its pink color and sweet berry flavor are naturally present in ruby cocoa beans.
